How We Roast Light, Medium, and Dark

Light roast is not an afterthought at RoCo. It is Full City craft on the same Motor Way roasters. Read how we roast, why we mix roast levels, and why we still roast dark when the cup calls for it.

Light Roast FAQ

What does light roast mean at RoCo?

At RoCo, our light roast lineup is roasted to Full City on Motor Way. You get brighter acidity, fruit and origin clarity, and a clean finish. Not thin, not underdone. Specialty-grade beans taken just far enough to taste the coffee.

Is RoCo only a dark roast company?

We are proud of French and Double French, and we roast light and medium too. Same small-batch craft since 1989. Same Motor Way building. Different stop on the roast curve for people who want brightness and balance.

Do you roast on-site in Santa Barbara?

Yes. We have been roasting small batches at 321 Motor Way since 1989. Locals call us RoCo. You can smell the roast from the parking lot on a good day.

Which light roast should I try first?

Start with House Blend for an easy everyday Full City cup, or Kona Blend if you want a touch more acidity and wine-like brightness. Not sure? Grab the Light & Medium Roast Sample Pack and taste four.

How does light roast compare to your dark roast?

Light (Full City) keeps more origin character and brightness. Dark (French and Double French) leans into body, sweetness, and roast depth. We mix roast levels in some blends on purpose. Read We Mix Roast Levels if you want the full story.

Can I subscribe or visit the cafe?

Subscribe for automatic bags at https://www.sbcoffee.com/pages/subscription, or pull up a chair at the cafe on Motor Way (https://www.sbcoffee.com/pages/cafe). Fresh roast tastes better in person.
