Why RoCo Still Roasts Dark

People ask why our coffee tastes darker than a lot of specialty shops.

Because we roast that way on purpose.

Santa Barbara Roasting Company has been on Motor Way since 1989. Locals call us RoCo. We are most well known for our dark roast coffee, and we take it seriously. That does not mean we burn cheap beans to hide them. It means we start with gourmet specialty coffee and take it to Full City, Viennese, French, or (for State Street) Double French with time and care.

A lot of the specialty world spent years talking people out of dark roast. Lighter cups got the magazine covers. We kept roasting the way our cafe and our wholesale accounts actually drink: fuller body, lower bite, a cup that still tastes like coffee when milk and sugar show up.

What "dark" means here

We do not sell Blonde or City as our light end. Our lightest roast is Full City. Then Viennese (also called Italian). Then French. State Street Blend, our most famous blend, gets a Double French. The full ladder lives on our roasting page. This post is the why, not a second textbook.

Dark roast should not mean bitter for bitter's sake. Done right, it is heavier and more intense, with sweetness still in the cup. Think of the difference between a light beer and a scotch: both can be well made. Ours lean toward the deeper end on purpose.

We also mix roast levels inside some blends, not only origins. Montecito Blend is the clear example: lighter notes and darker notes in one bag because we designed a flavor profile, not a single-origin flex.

How we get there

We air-cool the beans. We do not spray them with water to put weight back after the roast. That is how you keep quality instead of watering the coffee down. Small batches. By hand. In the cafe, on the original machine, Monday through Friday. If you want to see it, walk in.
