Why We Still Roast Dark

Dark roast is not a mistake we forgot to fix. It is how we make coffee that wakes the room. Read how we roast, why we mix roast levels, and what French really means at RoCo.

Dark Roast FAQ

What makes RoCo dark roast different from grocery-store dark roast?

We start with specialty-grade green coffee and roast it on-site in Santa Barbara to French and Double French. Dark does not mean burnt. You get body, sweetness, and a clean finish instead of ashtray bitterness.

How dark is French vs Double French at RoCo?

French is our classic dark: oily sheen, deep chocolate and roast notes, still balanced. Double French goes further for people who want maximum intensity. State Street leans into both.

Do you roast on-site in Santa Barbara?

Yes. We have been roasting small batches at 321 Motor Way since 1989. Locals call us RoCo. You can smell the roast from the parking lot on a good day.

Which dark roast should I try first?

Start with State Street Blend if you want the house signature, or French Riviera for a straight classic French. Not sure? Grab the Dark Roast Sample Pack and taste four.

Is dark roast good for espresso and cold brew?

Yes. Our Espresso Blend is built for shots and milk drinks. Cold Brew Blend and several Frenchs shine iced or overnight. Dark roast holds flavor when you dial milk or ice.

Can I subscribe or visit the cafe?

Subscribe for automatic bags at https://www.sbcoffee.com/pages/subscription, or pull up a chair at the cafe on Motor Way (https://www.sbcoffee.com/pages/cafe). Fresh roast tastes better in person.
