Darker Roast Is Not Stronger Coffee

We hear it at the counter all the time. Someone has a long day ahead, and they ask for the darkest roast we have. They want the strongest coffee in the house, and to them, darker means more buzz.

It is a fair guess. A darker cup looks bolder and tastes bolder. But at Santa Barbara Roasting Company (locals call us RoCo), we have been a family roaster in Santa Barbara since 1989, and this is one of the myths we like to clear up. It sits right on our brewing page as Myth #3: "Darker roasts are stronger."

What "stronger" really means

Here is the short version from that page. Lighter roasts are the "stronger" coffee if you mean caffeine. A lighter roast spends less time in the roaster, so more of its caffeine stays with the bean. A darker roast spends longer in the roaster, and what it gains is flavor. The taste of the roast comes through, and the cup reads as big, heavy, and intense.

So "strong" is really two different things. One is lift, the coffee buzz you feel. The other is flavor, the weight and roastiness you taste. A darker roast wins on the second one. If you want more of the first, our brewing page says it plainly: drink a lighter roast.

That is the whole myth. We are not going to hand you lab charts. We would rather help you pick the right bag.

A simple light vs dark chooser

Want more lift? Reach for lighter. Our lightest roast is Full City, and a good place to start is Espresso Milano Blend. It is roasted Full City, and it is rich, smooth, and sweet, with an aromatic cup. It pulls a lovely crème in an espresso machine, and it is excellent brewed as drip too, so you do not need special gear to enjoy it. Want bigger, heavier flavor? Reach for darker. That is State Street Blend, our signature blend. It is roasted French and Double French for a dark, smoky experience, and it is not for the faint of heart. Pour in cream and it still stays black as night. This is the cup for someone who wants flavor that fills the mouth. Dark done right should not mean bitter, either. We want it full of flavor, heavier and more intense on the palate, the way a scotch differs from a beer.

Neither choice is the "right" one. They are just built for different wants. If you are chasing a morning boost, lighter is your friend.
